Cauliflower Mashed Potatoes for Diabetics
Most cooked potatoes have an extremely high glycemic index value, from 85 to over 100 depending on the type of potato. On the glycemic index, pure glucose is used as the control food, or standard, and has a glycemic index value of 100. As you can see, that means cooked potatoes are mostly or all glucose. So mashed potatoes can really send your blood sugar soaring!
Next time you have a hankering for mashed potatoes, try this instead. Steam some cauliflower and then prepare your ‘mashed potatoes’ using the cauliflower instead of potatoes. Just mash up the cooked cauliflower, add some butter, salt, and pepper, and stir it up. The result is pretty tasty and might even fool your dinner guests (at least until they take a bite). To make it a little more realistic, and still keep the carbohydrates down, make the recipe with 2/3 cauliflower and 1/3 potatoes.
This recipe makes for a great substitute for those high glycemic potatoes and will definitely keep your blood sugar from shooting up. Try it and let me know how you like it.
